Apple Spice Crumb Cake

I love making up good recipes, so I was delighted when I created this one.  It came about one day when I had some over ripe apples.  They were soft and bruised.  No one would eat them but I didn’t want to throw them out.  I thought they would work in some type of bread.  Afterall, I use my over ripe bananas in bread, so why wouldn’t apples work in the same way?  It turn out really good, but with a bit of tweaking, it is now great (if I do say so myself).  I have had some taste tests from others.  It has gotten great reviews from them too.  This cake can be enjoyed as a breakfast pastry, dessert or snack.  Try it!  I think you’ll like it.

Apple Spice Crumb Cake

  • 1 and 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 cup sugar
  • 1 cup apple, peeled and grated
  • 1 egg
  • 1/2 cup apple sauce
  • 1/4 cup canola oil


  • 1/2 cup unsalted butter
  • 1/4 cup packed brown sugar
  • 1/4 cup granulated sugar
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon baking powder
  • 1 cup flour

Preheat oven to 350 degrees.  Spray 8″ X 11″ glass baking dish with cooking spray.  Set aside.    In a medium size bowl,  combine butter, brown sugar, granulated sugar, flour, cinnamon and baking powder.  Mix together with hands or pastry cutter until it reaches a crumb like consistency.  Set aside.  In a separate bowl, combine sugar, apple, oil, egg and apple sauce.  Mix to combine.  Add all the remaining ingredients.  Stir until all dry ingredients are incorporated into the wet ingredients.  Pour into baking dish and top it with the crumble mixture.  Bake in 350 degree oven for 40 – 45 minutes.  Check with a toothpick to insure center is cooked.  Let cool for at least 1 hour.  Serve warm or cold.
